Sodium benzoate (C7H5NaO2) is a widely used preservative in the food, beverage, and pharmaceutical industries. It is the sodium salt of benzoic acid and appears as a white, odorless powder that is highly soluble in water. Sodium benzoate functions primarily by inhibiting the growth of microorganisms such as bacteria, yeasts, and molds, thereby extending the shelf life of products.

Sodium benzoate consists of a benzene ring with a carboxylate group attached, forming the sodium salt of benzoic acid

Unlike benzoic acid, which has limited solubility in water, sodium benzoate dissolves readily in water, making it easier to incorporate into aqueous solutions.

Sodium benzoate works best in acidic environments (pH 2.5 to 4.0). At higher pH levels, it converts back to benzoic acid, which is less soluble but more effective as a preservative due to its undissociated form.

• Preservation Mechanism:

  • Sodium Benzoate: Once dissolved in an acidic solution, sodium benzoate dissociates into benzoate ions and sodium ions. The benzoate ions inhibit microbial growth by interfering with cell metabolism and disrupting cellular structures.
  • Benzoic Acid: In its undissociated form, benzoic acid penetrates microbial cells more effectively than benzoate ions, acting directly on cell membranes and enzymes within the microorganism, thus providing stronger antimicrobial activity at lower pH levels.
